Using
Oyster is the third most grown mushroom worldwide. The application is both the catering as well as in the pharmaceutical industry. Its slightly spicy taste adds food the specific aroma differing from other fungal species. Its beneficial effects on the human body are devoted by countless studies. In general, we can summarize the positive effects of oyster mushrooms on humans as anti-diabetic, antioxidant, antiviral and anti-cancer. From the other positive properties it may be noted reducing blood pressure, improve vision, reducing cholesterol and triglycerides in the blood (Hobbs, 2015). Influence of beta-glucan, many times marked in the literature also as Pleuran, has a high antioxidant potential. This fact has been repeatedly proven on the laboratory rats (Bobek, Galbavý, 2001).
Botanical charakteristic
Oyster mushroom reminds with her appearance and colour of hat sizes 5-25 cm oysters, implying also her species name. Colouring fruiting body is dependent on the production strain of the fungus and growing conditions. Usually, the colour is depending on cultivation temperature then ranges from white to brown to violet-grey or bluish grey. Individual bunches of fruiting bodies can reach the weight of up to one kilogram. Fruiting bodies are often covered by spores which generating white coat mycelium from higher-growing fruiting bodies. Petals converge near stem, they are soft thick and thin, stem is 5cm long with diameter to 3 cm (Haggara, 2014).
